As the monsoon arrives in parts of central India, local markets begin filling with fresh seasonal vegetables that are available only for a short period. One such favorite in the Nimar region of Madhya Pradesh is Kundru, also known as ivy gourd (Coccinia grandis). Known for its mild flavor and versatility, Kundru is commonly prepared as a quick stir-fried vegetable dish that is enjoyed with bhakri, chapati or dal-rice.

The dish, popularly called Kundru Bhaji, is easy to cook, requires only a handful of ingredients and can be ready in around 10 minutes, making it a practical choice for busy weekdays.

Why Kundru Is Popular During the Monsoon

Kundru is a seasonal vegetable that appears in abundance during the rainy months in many parts of India. Its tender texture and ability to absorb spices make it a favorite in home kitchens.

Unlike elaborate curries, Kundru Bhaji is prepared with simple pantry ingredients such as onions, garlic, ginger, cumin and mustard seeds, allowing the vegetable’s natural flavor to stand out.

Nutritional Benefits of Kundru

According to Dr. Gaurav Thawani, Kundru is a nutritious vegetable that contains:

  • Dietary fiber
  • Vitamin A
  • Vitamin C
  • Iron

Because of its fiber content, Kundru may help promote fullness as part of a balanced diet. It is also considered a suitable vegetable for people looking to include more nutrient-rich, low-calorie foods in their meals.

Some studies have explored ivy gourd’s role in supporting healthy blood sugar management. However, people with diabetes should follow medical advice and not rely on any single food as a treatment.

How to Make Kundru Bhaji in 10 Minutes

Ingredients

  • 250 grams fresh Kundru (ivy gourd), washed and finely sliced
  • 1 medium onion, finely chopped
  • 8–10 garlic cloves, chopped
  • 1-inch piece ginger, chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2–3 tablespoons cooking oil
  • Salt to taste

Optional: Add turmeric powder, red chili powder or fresh coriander for extra flavor.

Method

  1. Wash the Kundru thoroughly and slice it into thin pieces.
  2. Heat oil in a frying pan or kadai.
  3. Add mustard seeds and cumin seeds. Let them splutter.
  4. Add chopped garlic, ginger, onions and green chilies.
  5. Sauté until the onions turn light golden.
  6. Add the sliced Kundru and salt.
  7. Stir well and cook over medium heat for about 8–10 minutes, stirring occasionally.
  8. Once the vegetable becomes tender while retaining a slight bite, remove it from the heat.

Serve hot with bhakri, chapati or steamed rice.
